RECIPE / RESEP
INGREDIENTS
- 1 whole chicken, backbone cut loose and flattened,
- 800 g cherry tomatoes,
- 4 garlic cloves, chopped,
- 250 ml chicken stock (1 stock cube, dissolved in 250 ml boiling water),
- 250 ml cream,
- 125 ml white wine,
- 250 g brown mushrooms, cut into chunks,
- 100 ml spring onions,
- ½ packet dry white onion/mushroom soup powder (optional),
- coarse salt,
- black pepper,
- chicken spice to taste,
- fresh basil or parsley to garnish
METHOD
Use a sharp knife and cut deep cuts into the chicken’s breast, thighs and drumsticks. Put the tomato, garlic, mushrooms and spring onions in the Large Oval Roaster. Mix the cream, chicken stock, white wine and soup powder (optional). Pour over the vegetables.
Put the chicken on top of the vegetables and sprinkle with a little olive oil. Flavour with coarse salt, pepper and chicken spice. Place in a cold oven. Turn to 160°C and cook the chicken for 60-90 minutes. Take out of the oven but let the chicken rest for about 10 minutes before opening the roaster. Garnish with fresh basil or parsley.
BESTANDDELE
- 1 heel hoender, ruggraat losgesny en platgedruk,
- 800g kersietamaties,
- 4 knoffelhuisies, gekap,
- 250ml hoenderaftreksel (1 blokkie aftreksel, opgelos in 250 ml kookwater),
- 250ml room,
- 125ml witwyn,
- 250g bruin sampioene, in stukke gesny,
- 100ml sprietuie,
- ½ pakkie droë wit ui/sampioen soppoeier (opsioneel),
- growwe sout,
- swart peper,
- hoender speserye na smaak,
- vars basiliekruid of pietersielie om te garneer.
METODE
Gebruik ‘n skerp mes en sny diep snye in die bors, dye en boudjies van die hoender. Plaas die tamatie, knoffel, sampioene en sprietuie in die Large Oval Roaster. Meng die room, hoenderaftreksel, witwyn en soppoeier (opsioneel). Gooi oor die groente.
Sit die hoender bo-op die groente en sprinkel ’n bietjie olyfolie oor. Geur met growwe sout, peper en hoenderspeserye. Plaas in ‘n koue oond. Skakel aan tot 160°C en kook die hoender vir 60-90 minute. Haal uit die oond, maar laat die hoender vir sowat 10 minute rus voor jy die rooster oopmaak. Garneer met vars basiliekruid of pietersielie
