RECIPE / RESEP
INGREDIENTS
- fresh vegetables of your choice – I used butternut and sweet potato
- onion, cut into rings
- spring onions, chopped
- 5 ml garlic, chopped
- 4-6 fresh corn
- 200 g streaky bacon
- 100 ml butter, melted
- 4 x 5 ml butter for the vegetables
- bread crumbs (I use rusk crumbs)
- 2 ml paprika
- 2 ml garlic flakes
- fresh parsley, chopped
- salt, pepper and seasonings to taste
METHOD
Put the vegetables and sliced onions in the Argilla Large Rectangular bowl. Season with salt, pepper and garlic. Pull the leaves off the corn and wrap one strip of streaky bacon around each corn. Chop the remaining bacon and add it to the vegetables. Sprinkle some crumbs on top of the vegetables and dot it with the 4 x 5ml butter. Pack the corn on top of the vegetables. Mix the melted butter, paprika, seasoning and garlic flakes and drizzle each corn with it. Put the lid on. Put in a cold oven, turn on the oven at 160ºC and bake for 60 minutes or until cooked. Delicious with any meat dish.
